Recipe: Scalloped Hasselback Potatoes by Tasty Kitchen

Such a simple yet delicious recipe idea by Tasty Kitchen. I made this for lunch today and it was to die for! For their full recipe and step by step instructions click here.

If you'd like a lighter/healthier take, try my version below:

Ingredients:
- 2 Potatoes
- 1 Tablespoons Butter
- ¼ teaspoons Salt
- 2 teaspoons Olive Oil
- ¼ cups Cheddar Cheese

1. Preheat oven to 200 (400ºF). Scrub potatoes.
2. You need 2 wooden spoons with handles of the same width. Place a spoon on each side of the potato and start slicing the potato into thin slices. A great idea by Tasty Kitchen! The spoons stop the knife from cutting all the way through the potato.
3. Slice the butter and cheese into thin pieces. Alternate the butter and the cheese, stuffing them in between the slices of the potato. Season the potato with salt. Drizzle with olive oil.
4. Bake at 400ºF for 45 minutes. Remove from the oven and top with cheddar cheese.
Place back in the oven for 10 minutes. Remove and serve!

DIY: Easter bunny bread rolls by Kirbie's Cravings

Happy Easter everybody! Don't you just adore these Easter bunny bread rolls? If you're feeling a little creative, you could serve these to add a little fun to the dinner table tonight!

Here's an easy 10 minute baking time recipe by Kirbie's Cravings.

Ingredients:
2-1/2 to 3 cups all-purpose flour
2 tablespoons sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1 cup (8 ounces) sour cream
1/4 cup water
2 tablespoons butter
1 egg

Directions:
1. Put the butter, the sour cream and water in a small saucepan and heat, but do not cook. Cool to tepid then add the remaining ingredients.
2. Put in a kneader. If thick add more water.
3. Let it rise double and cut into 16 equal parts.
4. Use baking tray lined with baking paper and cut the ears with scissors. Make sure you smooth the edges around, so you do not end up with devil horns. The eyes can be poked in or use pepper grains.
5. Bake at 375° for about 10 minutes or until golden brown.

Photos are from the lovely Kirbie's Cravings. Check out her other recipe, Honey bunny buns.

Valentines Day breakie: Bacon hearts

How sweet are these bacon hearts by Paper Mama? My husband and I are doing Valentines on a budget this year so will need to get super creative! This is definitely on my list of things to do!

Directions:
You will need 12 slices of bacon. Preheat oven to 400. Cut your bacon slices in half. Use 2 pieces of the cut in half bacon and shape them into a heart on a sheet pan (make sure this pan has sides so the grease doesn’t get all over your oven!). Bake for 18 – 25 minutes or until done. Serve however you’d like for your loved one.

Santa hat strawberry cookies!

Wondering what treats to take to your Xmas party? Why not take these super cute simplified version of santa hat strawberry cookies by Domestic Fits.

Here's what you need:

- Strawberries
- Biscuits of your choice
- Cream cheese icing - easy recipe here

Add the icing into a piping bag. If you don’t have a piping bag, add to a large, heavy duty, zip lock bag and cut about 1cm off the bottom corner, this can be used as a make-shift piping bag.
Pipe a dime sized amount of cream onto the cut end of the strawberry and place in the middle of your sugar biscuit. Pipe the cream around the base of the strawberry, as well as a pea sized amount on the tip of the berry to resemble Santa’s Hat.

Enjoy!
